Tools of the Trade (i)
This is my Global Chefs Knife and the most useful tool in my kit. I have owned it for 3 years and would recommend it as a great knife for anyone looking to gain experience and feel more comfortable handling a knife. The steel is amazing and holds an edge for quite awhile. I use this knife mostly around my home kitchen (cooking for the D@W's) and the last time I sharpened it was 6 months ago - it still slices tomato skin like a razor and hacks through bone and cartilage with ease. My only issue is my comfort with a wider heavier blade from my time at Memphis Blues has made this knife seem too light. I may look to bring on a new blade in the near future. Updates will follow...
